
Amoroso’s Baking Co. has supplied the bread for Philadelphia’s cheesesteaks for more than a century, churning out over 250 million rolls each year. The facility runs around the clock to satisfy demand, with every 800-pound batch yielding 2,500 individual rolls—the essential component of the city’s iconic sandwich.
Production starts with 200,000 pounds of hard red spring wheat flour arriving weekly. Workers sift the flour before sending it to mixers, where exact ratios of flour and water form massive dough batches. The dough is then divided into uniform rounds and processed through eight separate production lines. Rolls that fail quality control, due to irregular shape or size, are diverted to bread crumbs or animal feed.

After fermentation in cold storage and proofing in warm chambers, each roll receives a hand-cut score before moving into a 135-foot oven. The baking cycle lasts 20 minutes, producing golden-brown rolls with a dense interior built to support heavy sandwich fillings. The factory’s capacity surpasses that of most independent bakeries, with ovens sized for large-scale output.
Finished rolls are distributed to grocery stores, sandwich shops, and even Lincoln Financial Field, where Amoroso’s provides more than 2,000 dozen rolls for Philadelphia Eagles home games. Twice daily, Dalessandro’s Steaks & Hoagies, a Michelin-recognized establishment, receives 65 dozen rolls to maintain its high-volume service.
